Sticky Toffee and Date Cookies

Ingredients
  

  • 110 g golden caster sugar
  • 70 g granulated white sugar
  • 115 g margarine / unsalted butter
  • 1/4 tsp salt
  • 180 g plain flour
  • 1 1/2 tbsp double cream
  • 1/2 tsp vanilla extract
  • 90 g chopped dates I used organic dates
  • 65 g fudge pieces

Instructions
 

  • Preheat the oven to 180°C / 350°F / gas 4. Prepare your lined tin.
  • Using an electric mixer use a paddle attachment and cream together the butter, golden caster sugar, granulated sugar and salt until nice and fluffy. This should take a few minutes.
  • Add the cream and vanilla extract, mix it in and follow with the flour. Mix until everything is combined and comes together to form a dough.
  • Add the chopped dates and fudge pieces, then mix so they are evenly distributed.
  • Scoop out the dough and roll into medium sized balls, about the size of a golf ball. Place each ball on to the baking tray leaving enough space for the cookie dough to spread as it bakes. You may have to cook them in a couple of batches.
  • Place the cookies in the oven for about 15 minutes. Check them after about 12 minutes if you want them slightly chewier than crunchy.
  • Leave the cookies to cool then transfer them to an airtight container. Enjoy!
