Prawn and Vegetable Ramen

raw king prawns
(shrimp)

shiitake mushrooms
chopped into quarters

sesame oil

fresh ginger
crushed

garlic cloves
crushed

low-sodium soy sauce

tbsp
mirin
(Japanese rice wine)

ml
chicken stock
good quality

red chilli

pak choi

pieces
tender stem broccoli

carrot
cut into semi-circles

handful
mange tout
2
handfuls
kale
3
spring onions
chopped

nest
rice noodles

handful
fresh coriander
Instructions
Heat the sesame oil in a large saucepan over a medium heat. Add the garlic and ginger and cook for 2 minutes.
Add the soy sauce and mirin, stir to combine. Cook for a minute then add the chicken stock.
Cover and bring to the boil. Turn down and simmer. And add the mushrooms.
In a separate saucepan add the noodles to boiling water and cook to the packet instructions.
Add all the veg and cook for 3 minutes. Sprinkle with fresh coriander.
Add the prawns and when they have changed colour they should be ready - this will take 2-3 minutes.
Add the noodles to one side of your bowl and ladle the veg broth and garnish with more coriander. Enjoy!
