Being English we tend to only have pancakes once a year on Shrove Tuesday. Growing up we tended to have crêpe-style pancakes on that day, always with oranges and sugar. Dean’s family would always have ice cream with them as well. My friend Gemma always has butter and salt! 😮 That’s the beauty of pancakes you can have them with whatever you like, sweet or savoury. In 2015 we were very lucky to spend Christmas in New York. It’s one of our absolute favourite places, we’ve both been before but it was great to experience the festive period there. On Christmas morning we ordered room service as a treat and had American style fluffy pancakes for breakfast, which were amazing! So good in fact that we’ve now made it our tradition to do that every year!
Having made American style pancakes at home a few times since I wanted to share this recipe with you all as they’re the easiest and best tasting pancakes ever! We prefer them by far now to the traditional French style ones we grew up with.
If you have a blender it will take no longer that 3 minutes to mix up your batter. Pancakes are so much fun to make with children and can be a real show stopper if you have friends over. Saying that though it really doesn’t have to be a special occasion just to make pancakes! In fact I wish we made them more often.
Today just being a random Sunday it was so nice to have something different for brunch as we’d normally have something like a bacon and egg sandwich. We decided to make a blueberry compote to go with them, although Dean did say “shall we have bacon too?” 🙈 😂 I said maybe next time we can have it with some crispy streaky bacon.
With Pancake Day not that far away I wanted to post this recipe ahead of time so you can get all the ingredients you need. I really hope you try them, you will never look back!

Super Easy American-Style Fluffy Pancakes
Ingredients
Pancake batter
- 225 g plain flour
- 300 ml whole milk
- 30 g melted butter
- 2 eggs beaten
- 1 tbsp baking powder
- 1 tsp caster sugar
- 2-3 drops vanilla extract
- 1 pinch salt
- 6 strawberries optional
Blueberry compote
- 250 g blueberries
- 35 g caster sugar
- 2 tsp lemon juice
- 3 tbsp water
Instructions
- To make the blueberry compote add half the blueberries to a pan on a medium heat along with the sugar, lemon juice and water. Cook for 10 minutes, stirring often. Then add the rest of the blueberries and cook for a further 5 minutes.
- The easiest way to make the pancake batter is to put all your ingredients in to a blender and whizz everything up, it literally takes seconds! If you haven’t got a blender then use a big mixing bowl and make a well in your flour. Add all your ingredients and using a fork, start to mix everything together until you have a batter with a smooth consistency.
- Add a small amount of butter to a non-stick frying pan on a medium heat. Pick the pan up and circle it round so the butter spreads evenly. Pour the pancake batter into the centre of the pan, again using a circular movement to spread it out evenly.
- Once your pancake starts to get tiny bubbles in it give the pan a little shake and it should release, using a flipper turn the pancake over and cook for a further minute. Both sides should have a golden colour to them.
- Stack them up on top of each other and pour over the blueberry compote. Serve and enjoy!
