Who would think soy marinated soft boiled eggs (known in Japan as ajitsuke tamago) would be such a delight to eat — but they truly are! The marination changes the taste and texture of the egg white and if cooked just right you end up a smooth, creamy yolk to enjoy.
They’re great in ramen, (such as in our chilli beef ramen recipe) soups and salads or even just to snack on. The best is when you dunk meat or vegetables into the centre.
Marinating them in the soy mixture gives them colour and saltiness, provided a fantastic kick of oriental flavour to your dish.
