Prawn and Vegetable Ramen
Try this super easy and tasty prawn and vegetable ramen which is packed full of goodness so you will be ticking off your 5 a day in no time!
Ingredients
- 12 raw king prawns (shrimp)
- 250 g shiitake mushrooms chopped into quarters
- 2 tsp sesame oil
- 2 tsp fresh ginger crushed
- 3 garlic cloves crushed
- 3 tbsp low-sodium soy sauce
- 2 tbsp mirin (Japanese rice wine)
- 500 ml chicken stock good quality
- 1 red chilli
- 1 pak choi
- 10 pieces tender stem broccoli
- 1/2 carrot cut into semi-circles
- 1 handful mange tout
- 2 handfuls kale
- 3 spring onions chopped
- 2 nest rice noodles
- 1 handful fresh coriander
Instructions
- Heat the sesame oil in a large saucepan over a medium heat. Add the garlic and ginger and cook for 2 minutes.
- Add the soy sauce and mirin, stir to combine. Cook for a minute then add the chicken stock.
- Cover and bring to the boil. Turn down and simmer. And add the mushrooms.
- In a separate saucepan add the noodles to boiling water and cook to the packet instructions.
- Add all the veg and cook for 3 minutes. Sprinkle with fresh coriander.
- Add the prawns and when they have changed colour they should be ready – this will take 2-3 minutes.
- Add the noodles to one side of your bowl and ladle the veg broth and garnish with more coriander. Enjoy!
