Prawn and Vegetable Ramen

Ingredients
  

  • 12 raw king prawns (shrimp)
  • 250 g shiitake mushrooms chopped into quarters
  • 2 tsp sesame oil
  • 2 tsp fresh ginger crushed
  • 3 garlic cloves crushed
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp mirin (Japanese rice wine)
  • 500 ml chicken stock good quality
  • 1 red chilli
  • 1 pak choi
  • 10 pieces tender stem broccoli
  • 1/2 carrot cut into semi-circles
  • 1 handful mange tout
  • 2 handfuls kale
  • 3 spring onions chopped
  • 2 nest rice noodles
  • 1 handful fresh coriander

Instructions
 

  • Heat the sesame oil in a large saucepan over a medium heat. Add the garlic and ginger and cook for 2 minutes.
  • Add the soy sauce and mirin, stir to combine. Cook for a minute then add the chicken stock.
  • Cover and bring to the boil. Turn down and simmer. And add the mushrooms.
  • In a separate saucepan add the noodles to boiling water and cook to the packet instructions.
  • Add all the veg and cook for 3 minutes. Sprinkle with fresh coriander.
  • Add the prawns and when they have changed colour they should be ready – this will take 2-3 minutes.
  • Add the noodles to one side of your bowl and ladle the veg broth and garnish with more coriander. Enjoy!
