If you haven’t heard of orzo pasta then you’re in for a treat. Resembling rice it makes an excellent change from traditional pasta shapes and has a great texture when cooked just right. This salad is a great dish when the summer months start to approach.
It makes a superb side dish for a party or BBQ, or works well as a tasty lunch. You can add any of your favourite ingredients to it to make it your own.
Orzo Salad
Ingredients
- 200 g orzo
- 30 g sun dried tomatoes halved
- 30 g mixed olives small
- 30 g feta cheese cubed
- 1 tbsp tomato puree
- 1 tsp dried oregano
Instructions
- Boil a large pan of boiling water add a pinch of salt. Add the orzo and boil for 12 minutes.
- Chop all of the ingredients except the olives – leave them whole.
- Once the orzo it cooked drain well and add to a bowl. Mix in the tomato puree and a little bit of the oil from the sun dried tomatoes (optional), then add all of the other ingredients and mix well. Season with oregano, salt and pepper.
- Serve and enjoy!
