These lemon and coconut muffins are best as an afternoon treat and I found them even better the day after baking, once the lemon had infused even more into the muffin.
Once you take a bite you’ll find the oozy lemon curd in the centre of the muffin which is a really nice surprise!
The coconut adds texture to the muffin as well as another flavour dimension.
I made them to take around to a friends house, she and her son really enjoyed them and we had them with a nice cup of tea.
If you haven’t got a syringe then I do recommend you get one as injecting the curd does make for a lovely addition to the muffin. If not though or you feel like you would like more curd the simply cut your muffin in half and spread it on.
