I’ve been eating sausage casserole since I was a child. It’s a meal that I introduced to Dean when we first moved in together and he really enjoys it now. This dish is so easy and a great family dinner in the winter months.
Sausage casserole goes a long way. As bonfire night is approaching, everyone loves a good get together and this dish would be great with some crusty bread or some mash sitting round the bonfire. Everyone loves sausage and mash so I like to do ours with butternut squash mash as unlike potato it’s one of your 5 a day, plus it add colour to your meal and tastes really good! It also provides a nice sweetness to compliment the rich casserole.
I’ve used Toulouse sausages as they have so much flavour already in them which only adds to the taste of the casserole. The great thing about this dish is it all goes in one pot and it is really that simple. Not only that it’s so warming and very tasty!
Herby Sausage Casserole
Ingredients
- 6 toulouse sausages
- 1 red onion sliced
- 2 clove of garlic finely chopped
- 1 tsp paprika
- 75 ml port
- 100 g mushrooms sliced
- 1 tsp herbes de Provence
- 400 g tinned tomatoes
- 200 ml chicken stock
- 2 tsp Worcestershire sauce
- handful fresh parsley chopped
Instructions
- Add a little oil to the pan and brown the sausages for 5 minutes. Add the onions and sauté them for a further 5 minutes.
- Add the garlic, port and mushrooms to the pan and cook for 5 minutes. Add the tomatoes, Worcestershire sauce, paprika, herbes de Provence, parsley and chicken stock. Bring to the boil and then simmer with the lid on for 30 minutes.
- Serve with some seasonal vegetables of your choice and some butternut squash mash.
Tip: Try making the casserole with different sausages of your choice.
