During our recent trip to Mexico, one of the activities at the hotel was guacamole making. We certainly weren’t going to turn that down!
We’ve been making guacamole for years but it was great to see it made properly and it’s safe to say we’ll be making it the right way from now on.
On our first night in Mexico we ordered guacamole but it came with an extra ingredient we’d not come across before… grasshoppers! Lucy was really into the idea of trying them but I was a little skeptical. As it turned out they were a lot smaller than I expected them to be and added quite a nice crunch to the guacamole. That’s another thing to say we’ve tried!
Guacamole
Ingredients
- 4 ripe avocados
- 1/2 medium onion finely chopped
- 1/2 lime
- 1 tomato chopped, seeds removed
- 1 large handful fresh coriander (cilantro)
Instructions
- Using a sharp knife, cut the avocados in half. Chop into the stone with the knife and twist to release it. Using a spoon, scrape out the avocado flesh into a large bowl.
- Add the rest of the ingredients and the juice of half the lime.
- Using a whisk, mash the avocado until smooth. Whisk everything together to your desired consistency. Season well with salt and pepper and serve.
