Easy Marmalade Loaf Cake
Wondering what to do with that jar of marmalade? This orange and almond cake recipe is so easy and delicious, you’ll love it!
Ingredients
- 150 g margarine / unsalted butter
- 150 g caster sugar
- 3 eggs
- 125 g self-raising flour
- 25 g ground almonds
- 2 large oranges
- 70 g thick cut marmalade
- 1 handful toasted almonds
Instructions
- Preheat the oven to 190°C / fan 170°C / gas 5. Line and grease a loaf tin 18cm by 8cm. Cream together the margarine and sugar until fluffy.
- Grate the zest of 2 oranges into the mixture and give it a good mix.
- Add the eggs and continue to mix until everything is combined. Add the flour and ground almonds, continue mixing.
- Put your cake mixture into a prepared medium sized loaf tin and place in the oven for 35-40 minutes.
- Once cooked, turn out the cake onto a wire rack and leave to cool completely.
- Spoon the marmalade on top of the cake and sprinkle with toasted almonds.
- Have a slice with a cup of tea. Enjoy!
