Easy Marmalade Loaf Cake

Ingredients
  

  • 150 g margarine / unsalted butter
  • 150 g caster sugar
  • 3 eggs
  • 125 g self-raising flour
  • 25 g ground almonds
  • 2 large oranges
  • 70 g thick cut marmalade
  • 1 handful toasted almonds

Instructions
 

  • Preheat the oven to 190°C / fan 170°C / gas 5. Line and grease a loaf tin 18cm by 8cm. Cream together the margarine and sugar until fluffy.
  • Grate the zest of 2 oranges into the mixture and give it a good mix.
  • Add the eggs and continue to mix until everything is combined. Add the flour and ground almonds, continue mixing.
  • Put your cake mixture into a prepared medium sized loaf tin and place in the oven for 35-40 minutes.
  • Once cooked, turn out the cake onto a wire rack and leave to cool completely.
  • Spoon the marmalade on top of the cake and sprinkle with toasted almonds.
  • Have a slice with a cup of tea. Enjoy!
