I wanted to make these Christmas brownies last year but just ran out of time, so they were at the top of my list this year! I’m SO glad that I made them – this recipe will become a tradition in my household that’s for sure!

Dean and his brother love mince pies and when they both lived at home used to buy boxes of different mince pies as soon as they’d arrive in the shops. They’d try all the different types and try to find the best! Dean bought a box home last week and my mum asked whether he’d save them for Christmas, I laughed as I knew they wouldn’t last more than a day or two!

I do like a good mince pie but they’re not my absolute favourite – I wouldn’t buy a box and get excited like Dean does 😂

Now these brownies I would get excited by having every year! 😊 They are the gooiest ones I’ve ever made and contain all those festive flavours that we’ve come to love in mince pies. Some people I know don’t particularly like fruit cake or mince pies, however I’d put money on them loving these brownies!

The best part is there’s nothing fancy or difficult about them. Simply make your brownie mix and then throw in a jar of top quality mincemeat. Job done! Honestly if you only make one new recipe this Christmas, make sure it’s this one. You, your friends and your family will love them!

Christmas Brownies Recipe

Christmas Brownies

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings 20 brownies

Ingredients
  

  • 300 g margarine / unsalted butter
  • 230 g dark cooking chocolate at least 70% – I use Green and Black’s
  • 300 g golden caster sugar
  • 6 eggs
  • 105 g plain flour
  • 35 g cocoa powder
  • 410 g mincemeat good quality
  • 1 tbsp icing sugar to dust

Instructions
 

  • Preheat the oven to 180°C / 350°F / gas 4. Prepare your lined tin.
  • Place the butter in a heatproof bowl along with the dark chocolate. Place a small amount of boiling water into a saucepan and rest the heatproof bowl with the butter and chocolate on top, then melt the contents on a low heat. You don’t want the water to boil. Once melted set aside.
  • Add your sugar and eggs to an electric mixer and whisk for about 2 minutes until it’s nice and frothy.
  • Pour your chocolate mixture into the frothy egg mixture and whisk for a few minutes until every is combined.
  • Sift the flour and and cocoa powder into your mixture and stir with a wooden spoon until you have a nice thick mixture and everything is combined.
  • Spoon the mincemeat into your brownie mixture and gently stir it in.
  • Pour all the mixture evenly into your prepared tin, gently bang the tin on the work surface to get rid of any air bubbles.
  • Bake in the oven for 25-30 minutes, make sure you check them with a metal skewer and the mixture is not wet, they may be a little sticky though due to the mincemeat.
  • Dust with icing sugar, serve and enjoy!
