Over the past month or two we have been very busy with new work adventures, working on the house and entertaining friends with lots of pizza (I mean LOTS of pizza and we’re still not getting bored of it!). Dean’s Mum came round last week and had her first ever pizza and said that she really enjoyed it!
She doesn’t like tomato so she had a white pizza, drizzled with a little oil on the base instead. The best thing about doing that was that the base goes really crispy! Mmm.
Who would have thought! We had guests coming around and I’m thinking, what can I make for dessert? I wanted to keep it simple but of course tasty.
I had come up with a few ideas for dessert but Dean wasn’t so keen, we were walking around the supermarket coming up with ideas, I said about doing something with cherries and Dean’s face lit up, he loves cherries! He suggested doing cherry brownies so that was the decision was made.
In the morning I prepped the cherries and pitted them all – I do recommend you wear an apron as it’s very messy! Dean thought it’d be fun to get involved and after pitting two cherries I told him to put his T-shirt in the wash if he ever wanted to wear it again! 😂
The best advice for this recipe is to get yourself a cherry pitter, it will save you so much time and it’s pretty fun too.
Once the brownies had come out of the oven Dean announced that he wanted to sample one and graciously said we could share one! I do like to sample my food before I give it to others so we did try a little bit, Dean said they were delicious and was really pleased I’d made them. They are a great dessert to make when you’re entertaining and go SO WELL with ice cream.
They’re also perfect to have the next day if you can’t fit dessert in. That wasn’t an issue this time though!
We picked our friends Adam and Mel up from the airport and as soon as we got back we fired up the pizza oven. Mel soon spotted the brownies so I was pleased I’d made them!
They were both fascinated by the pizza oven and both got stuck in. Adam loved all the toppings and even did himself a stuffed crust. We let dinner go down and then I brought dessert out.
Adam had the best idea EVER and asked if he could he have his brownie warmed up in the pizza oven! So we got a baking tray and some foil and into the oven they went! They came out slightly crispy on top and all warm and gooey in the middle, we served it with vanilla ice cream and it went down a treat!
It was the perfect end to a great night.
Cherry Brownies
Ingredients
- 300 g unsalted butter
- 225 g dark cooking chocolate 70% (I use Green and Black’s)
- 300 g white caster sugar
- 6 eggs
- 105 g plain flour
- 35 g cocoa powder
- 60 g milk chocolate chips
- 370 g cherries pitted and cut in half
Instructions
- Preheat the oven to 180°C / 350°F / gas 4. Prepare your lined tin.
- Place the butter in a heatproof bowl along with the dark chocolate. Place a small amount of boiling water into a saucepan and rest the heatproof bowl with the butter and chocolate on top, then melt the contents on a low heat. You don’t want the water to boil. Once melted set aside.
- Add your sugar and eggs to an electric mixer and whisk for about 2 minutes until it’s nice and frothy.
- Pour your chocolate mixture into the egg mixture and whisk for a few minutes until everything is combined.
- Sift the flour and and cocoa powder into your mixture and stir with a wooden spoon until you have a nice thick batter and everything is combined.
- Add over half of the chocolate chips and cherries, keeping the rest to sprinkle on top. Give the mixture a good stir.
- Pour all the mixture evenly into your prepared tin, gently bang the tin on the work surface to get rid of any air bubbles.
- Scatter the cherries upright on top and sprinkle on the chocolate chips.
- Bake in the oven for 25-30 minutes, make sure you check them with a metal skewer and the mixture is not too moist. They may be a little gooey though due to the moisture of the cherries.
- Let the brownies cool down it the tin, once cooled cut up in to squares.
- Serve hot or cold with vanilla ice cream. Enjoy!
