After stuffing our faces in New York I thought it was about time to start eating healthily again! I call it the soup diet 🍵. I find if I cut down on my carbs I drop back to what I was before the over indulging! Saying that I never deprive myself – if I want a cake or a chocolate bar then I have one. I just do most things in moderation and it seems to work well for me.

On the whole we eat pretty healthily and tend to be a bit more naughty of a weekend – weekends are for enjoying yourself after all! Lately I have got into drinking green tea mostly for the benefits of it, for the past 30 years I have never regularly drank hot drinks, only the occasional hot chocolate and that wasn’t very often.

January for us is all about cutting back the carbs and making food with good ingredients to keep it tasting yummy. We do that by using spices, herbs and healthy ingredients and have a little less on the plate than normal. Even though you are trying to be healthy the food still needs to be interesting otherwise you will get bored very quickly and soon be in the biscuit tin!

For the first time in my life I’m going to join the gym (yay me!), most of my working life has been spent stood up 8 hours a day so now I’m working from home I feel I need to get active. I really want to join pilates and yoga and feel good in my body, so the weekend I’m going to kit myself out with some gym clothes and join, I hope to keep it up so let’s see. Do you go to the gym? Broccoli and Salmon Soup

So my first recipe back in the kitchen after New York is this really yummy soup. It’s so very simple to make and Dean thinks it’s the best one yet. It’s full of flavour and bursting with nutrients – it has at least 10 vitamins, 8 minerals and folic acid. I recently found out that 100g of broccoli is only 34 calories so this is a great way of cutting down. Adding the salmon gives the soup even more flavour and gives you some protein to your lunch, it’s also high in omega-3 fatty acids and vitamin D, so what better way to start your healthy eating than have a bowl of this for lunch!

If you make a big batch of this you can freeze it too which is handy. Give it a go you won’t be disappointed!

Broccoli and Salmon Soup

Broccoli and Salmon Soup

On a health drive after indulging at Christmas? Try this broccoli and salmon soup for lunch – it’s healthy and incredibly tasty!

Servings 6 people

Ingredients
  

  • 700 g broccoli chopped, stalks included
  • 100 g watercress, spinach and rocket
  • 3 tsbs rapeseed oil olive oil will be fine too
  • 1 large onion chopped
  • 2 cloves garlic crushed
  • 500 ml chicken stock
  • 400 ml vegetable stock
  • salt and pepper seasoning
  • 350 g pre cooked salmon

Instructions
 

  • Place the onions in a large saucepan and cook with oil until they are soft.
  • Add the chopped broccoli, including the stalks and cook on a medium heat. Pour in a bit of chicken stock so it just covers the bottom of the pan, turn the heat right down and cover for 10-15 until the broccoli has softened.
  • Add your bag of watercress, spinach and rocket and stir until it has wilted.
  • Take off the heat and add the rest of the chicken stock. With your hand blender whizz everything up. Your mixture will be a little thick now so add the vegetable stock and blend again until smooth.
  • Put the soup back on the hob and heat back up to serve. I bought pre cooked salmon and sprinkled it on top of my soup cold. You can always add the salmon and stir it all in.
  • Serve and enjoy!

  1. Going to try this soup it looks yummy, I have no time for gym manage a swim once a week (30 slow lenghts) and tennis with the gitrls on a Thursday night if we played as wwell as we talked we would all be super fit.
