Avocado “Egg Mayo” Bagels With Smoked Salmon
Want a healthy, satisfying lunch? This deliciously creamy avocado and egg filling, topped with smoked salmon, will feel like luxury on a plate.
Ingredients
- 2 bagels
- 1 ripe avocado
- 2 boiled eggs I boiled mine for 7 minutes
- 100 g smoked salmon
Instructions
- Boil 2 eggs for 7 minutes on medium heat. Once they are done let them cool and remove the egg shells.
- Place the warm eggs in a bowl along with the avocado. Using a sharp knife slice everything up so it looks chunky, then use a balloon whisk to mix together until it resembles egg mayo. Season with salt and pepper.
- Spoon the egg and avocado mixture on to your bagel and top with smoked salmon. Enjoy!
