If, like us, you love Christmas pudding but can’t always eat a giant portion on Christmas day, then this recipe is for you! Instead of forcing down those extra spoonfuls (and regretting it later), save your leftover Xmas pud and make this delicious sundae a day or two later!
The great thing about this recipe is that it’s incredibly simple and uses up all sorts of leftovers. Got any cranberry sauce left? Great – throw it in! Any brandy butter or cream? In it goes! Vanilla ice cream? Yes please! All those flavours combine to create a truly delicious post-Christmas dessert.
The key to a good sundae is layers. So make sure you alternate between your ingredients to give your recipients plenty to root around for. One other tip is to be quick layering it all up – you don’t want that ice cream to melt! You’re best off setting up some sort of production line – put Uncle Fred on brandy cream duty, little Susie on ice cream duty and you’ll be done in no time!

Christmas Pudding Sundae
Ingredients
- Christmas pudding
- brandy cream or butter
- vanilla ice cream
- cranberry sauce
Instructions
- Create alternating layers of each ingredient until you have filled your sundae glasses.
- We did it in the following order: ice cream, cranberry sauce, Christmas pudding, brandy cream.
- Top with some more cranberry sauce, serve and enjoy!
