I’ve set myself a challenge this past month to eat five a day, not however realising how difficult it can be! I generally eat lots of fruit and vegetables but it can be surprising how much actually constitutes a portion. Some days I’ve managed it and others I haven’t.
I’ve been reading the labels and tins which gives you a great indicator of what classes as one of your five a day, which has been really helpful.
Fruit and vegetables don’t have to be boring or tasteless. That’s why with this recipe I wanted to make it super tasty and jam-packed with goodness!
The vegetable-packed couscous works beautifully with the Moroccan-inspired chicken and halloumi skewers. It would work as a great dish to have in the summer, with the skewers cooked on the BBQ.
