This street food inspired Vietnamese lemongrass beef is to DIE FOR! It’s so unbelievably tasty you’ll want to keep eating more. It’s certainly packed full of flavour and although it has quite a few ingredients it’s totally worth it! The beef is so tender it just melts in your mouth.
We have not been to Vietnam yet (although it’s definitely on the list)! This recipe is actually inspired by our recent trip to Copenhagen.
We went to an amazing food market and found a Vietnamese stall where I ordered the lemongrass beef baguette and Dean ordered the pork belly bao.
The plan was to share, but when I tried my lemongrass beef I really didn’t want to swap as it tasted so damn good!
I lived up to my word though and we did swap, just for a minute, until Dean caught a few subtle hints and we swapped back! 😋
When we arrived home I knew that I needed to recreate the lemongrass beef as it was so good! The one in Copenhagen was slightly spicier but other than that it’s pretty close!
As we had this for dinner, I wanted to make something to go alongside the beef so went for a spicy Asian style slaw, this worked really well as it was a refreshing contrast to the spiciness and a really nice texture, with a satisfying crunch.
This recipe is super easy and won’t let you down, in fact, I can pretty much guarantee you’ll want to make it again and again. You could always try serving the beef with noodles or rice instead of in a baguette.
