Recently we had a weekend away to Lisbon, where they are mad on their sardines. We had various types of sardines dishes and they have so much flavour! It’s great to get some oily fish in your diet. We had a few different sardine pâtés when we were there at various restaurants. I thought that once we’d gotten home I’d make some of my own!

Unfortunately, we can’t get fresh sardines like they can in Portugal, so I’ve used the tinned variety which still packs a huge amount of flavour. This pâté is so easy to make you really can’t go wrong. I would recommend you have a good blender to get a smooth consistency. It’s tasty, healthy and something you could make for a dinner party as a starter, just make sure everyone likes fish!

Ingredients
  

  • 240 g tinned sardines in sunflower oil
  • 2 heaped tbsp low fat cream cheese
  • 1 tbsp sunflower oil from the tin
  • 1 squeeze lemon juice
  • 1 tsp light mayonnaise
  • 1 handful fresh coriander chopped
  • salt and pepper seasoning

Instructions
 

  • Flake the sardines up with a knife and fork and take any visible bones out.
  • Put all the ingredients into a blender and whizz up until you have a smooth consistency.
  • Season with salt and pepper, and taste.
  • Try serving them in the tins for that rustic look.
  • Serve on sourdough toast and keep in the fridge and use within two days. Enjoy!
