These blueberry and lemon muffins couldn’t be easier to make and taste delicious with the limoncello frosting! If you’re a fan of the Italian digestivo (after dinner drink) then you’ll adore these muffins!
This recipe makes 12 delicious muffins and is so simple to follow that everyone can get involved. You might have to put the limoncello away though so the kids don’t get their hands on it! They can certainly help mix it all together.
These muffins are a brand new favourite of mine! They are so yummy and incredibly moreish while being soft in texture. Those blueberries go really gooey too once baked giving the muffins extra flavour and texture.
If you want to make these muffins child friendly then simply don’t add the limoncello and replace with more fresh lemon.
I got the idea of the limoncello frosting when we were recently in Italy. We often got a complementary shot of limoncello at the end of our meal. Or if we were lucky then they would leave the whole bottle! Limoncello is a great after dinner drink and really cleanses your palette. It works so well here in these muffins, giving them a real zing!
I personally think the blueberry and lemon in these muffins work really well together and the flavours definitely complement each other. The muffins are great for an afternoon snack with a cuppa tea, I had one for my breakfast too so if you’re very busy and on the go then they are great to make a few batches at a time.
I decided that I didn’t want too much icing, unlike a cupcake. I think it was just enough as the muffins are not too sweet on their own and the limoncello frosting just gives them that extra bit of sweetness.
The basic muffin recipe can be use for other types of muffin. You can swap your blueberries for another type of berry such as blackberries, strawberries, cranberries or raspberries. What is your favourite sort of muffin? I’d love to hear about them in the comments below!

Blueberry and Lemon Muffins with a Limoncello Frosting
Ingredients
- 100 g margarine/unsalted butter
- 100 g caster sugar
- 2 eggs
- 300 g self raising sugar
- 1 tsp lemon extract
- 1 lemon zest
- 140 ml milk
- 1 tsp baking powder
- 150 g fresh blueberries
Limoncello frosting
- 110 g margarine/unsalted butter
- 320 g icing sugar
- 1/2 lemon juice
- 1/4 tsp lemon extract
- 2-3 tbsp limoncello
Instructions
- Preheat the oven to 180°C / fan 160°C / gas 4. Line a 12 hole muffin tin. (I used large cupcake cases)
- Cream the butter, sugar and lemon zest together until your mixture is nice and fluffy.
- Add the eggs, beating into the mixture.
- Add your flour and baking powder then stir into the mixture with a wooden spoon until the flour has all gone. It doesn’t matter if your mixture is a little lumpy.
- Stir in the lemon extract and the milk, then continue to stir with your wooden spoon until you get a nice batter.
- Add your blueberries to your batter and stir them in. Divide the mixture evenly into the cases and place in the oven for about 25 minutes or until they are nice and brown.
- Let your muffins cool down and prepare your frosting.
- Cream your margarine in your mixer for about 3-5 minutes. Sieve the icing sugar into the mixture and on a low speed whisk so it all comes together to a paste.
- Add your lemon extract, fresh lemon juice and your limoncello to the mixture. Stir well, loosening it up. Test your mixture, you can always add more limoncello if you wish. Just remember you don’t want it to be too runny to pipe. If this does happen just add a little more icing sugar.
- Pick a nozzle and pipe a small amount of frosting into the centre of the muffin.
- Serve with a cuppa tea or why not have it with a shot of limoncello, you don’t want to waste it!
