Anything with chocolate in is yummy right? These cherry and dark chocolate flapjacks are super easy to make and take no time at all. They’re gooey, chewy, chocolatey and taste so great! They’re perfect for an afternoon snack with a cuppa.
I decided to use tupelo honey to bind it all together as it’s better for you than golden syrup or maple syrup. Even though it’s still high in sugar it’s a natural sugar. I used good quality honey which I bought from my local farmers market. This time of year like many others I do suffer a lot from hay fever – they say if you have a teaspoon of local honey a day you should build up a good resistance.
I used organic rolled oats for my flapjacks as they are really good for you – I wanted to keep some of my ingredients on the healthy side. Rolled oats have got Vitamin A, E, B1, B2, zinc, copper, silicon, magnesium, potassium and phytochemicals (which have antioxidants that can help protect your cells against free radicals – known to reverse the signs of ageing).
Oats are also very high in calcium and are great for feeling full for longer in order to help you eat less through the day. They’re low in saturated fat and contain no sugar, cholesterol or sodium. You can enjoy rolled oats in muesli, porridge, granola, oat biscuits, oatmeal bars and lots more – all you need is imagination! Keep in mind which oats you are buying when you go shopping, avoid the commercial flavoured brands as they are not as good.
Even though these flapjacks have got some unhealthy ingredients such as the glacé cherries, sugar and margarine I always like to use the only best ingredients. As you have probably read in previous posts I’m a real fan of dark chocolate and in moderation a little has got lots of healthy benefits. Once these have been cut up into fingers one wont hurt you with a cuppa tea or coffee.
The best thing with this flapjack recipe is that you can adapt it to your tastes and put any ingredients in there that you want – including any sort of dried fruit, different types of chocolate, nuts and many more. What are your favourite types of flapjack? Let me know in the comments! 👍
Cherry and Dark Chocolate Flapjacks
Ingredients
- 110 g margarine/unsalted butter
- 110 g caster sugar
- 5 tbsp honey
- 90 g glace cherries
- 50 g flaked almonds crushed
- 225 g rolled oats I used organic
- 90 g dark chocolate chips
- 50 g dark cooking chocolate
Instructions
- Pre heat the oven to 180°C / 160°C fan / gas mark 4. Grease and line a baking tray.
- Melt the margarine, sugar and honey in a saucepan on a medium heat, being sure not to boil.
- Remove from the heat and add the cherries, almonds and oats then mix everything together.
- Add your dark chocolate chips and stir in.
- Tip the mixture on to the middle of the baking tray and shape it into a rectangle about an inch high.
- Bake for 25 minutes or until golden brown.
- Once your flapjacks are cooked let them cool on the side, leaving them in the tray.
- Once it has cooled down, melt the dark chocolate and using a spoon flick over the top on your flapjack.
- Leave the chocolate to settle and cut in to fingers. Serve and enjoy!
